Long day

I was free today.
Horrible days those free days, lol.
Had a huge(ish) pot of hazelnut spread, some with bread, some without.
Really horrible.
For lunch made soup. Yes, the usual stuff, lol.

Not exactly the best day.

But the weather, hey...

Jerusalem Artichockes

Good week or maybe two ago I have bought Jerusalem Artichokes.
Actually, in Dutch they're called "aardperen". Well, I am curious. And never seen anything like that so decided to make something out of aardperen (kruske iz zemlje).
So, I searched the net in search for...

A very interesting recipe.
What I've done was used the apple vinegar instead of white vinegar (I have no white vinegar).
Really wonder how will it come.
It'll be eaten with salad.

And this morning I had PIZZA for breakfast!!!!!
YES!!!!
Yesterday evening I baked bread (corn-rye - yes, with gluten) and left a bit for my pizza.
Half pizza I made with cheese and pesto, other half was with anchovies. And lots of onions and tomato sauce and capers and olives.
Oh, I love my surprise breakfasts...

Now waiting for the JA...

Here I am. Make sure you DO cook them for the full 25 minutes. And only THEN take of the lid and bake a bit more. I was in a hurry (hungry!!!!) so, mine were a bit too undercooked. :D

Ok, if you can't digest inulin, (it's a type of carbohydrate and JA are FULL of that stuff), beware!!!

Leek stew

Easy and quick

50gr bacon (for taste) - cut in stripes
2 cloves garlic
1 carrot (cleaned and cut)
1 potato (peeled and cut)
1 leek (cut and washed)
1l water
pepper
1 spoon red pepper paste
2 spoons corn flour

Put bacon in water and let it cook for five minutes.
Then add carrot and cook for another five minutes.
Then add potato and leek, red pepper paste and pepper (freshly ground if possible) and let it simmer for another 15 minutes.
5-10 minutes before turning off the heat, add 2 spoons of corn flour (for polenta) to thicken the stew.
Eat with bread.

P.S. I added some red chilli pepper (but again too much - it was super spicy, just the way I like it, lol).

Experiment with green salad

I hate the third day.
It's always painful. And I feel swollen like a huge balloon.
And I am not in the mood to eat, and I don't eat that much. And still I feel like I have eaten a ton of food and I feel full and swollen and... bah!

So, today, after the breakfast (buckwheat porridge with two oranges and raisins, cooked on water, with some cinnamon, from yesterday :D), I ate only a few grapes.
And I feel like I've eaten a whole barrel.

Anyway, for today I wanted something simple and easy and not too difficult, and not too heavy. And it had to come with the green salad.

So, my first thought was rice with basil paste, but then...
BTW, thank goodness I have finally finished that rice. I really had no idea how to cook it. On the box it said, put the rice in the boiling water. I did it today. When I checked 20 minutes later, it was still as hard and non-swollen as before.

So, here it goes:

1 whole green salad
40gr rice
1 tin sardines in oil
3 spoons basil paste
2 spoons olive oil
3 spoons grape seed oil
1 lemon
a pinch of salt (not too much, as sardines are already salty)

Cook the rice (check how your rice needs to be cooked, to get it swollen and fluffy).
Cut the salad - I used ijsbergsla - no idea about the name in English - you do not open the leaves, you need to cut it in stripes, then wash the cut salad.
And them mix all together.
It is a bit unusual, but it is light enough and lots of fibre.

No dinner for me.
But sleep! Sleep! SLEEP!!!

P.S. Eating the salad. It is perfect! Nice combinations.

The times are changing.
I am changing.
Even I do complain about the younger generations being "too loose, having no sense of respect, lazy" or whatever my generation has been accused by the previous one.
I don't like generalisations, and I still do it.

Sarma (or filled cabbage leaves)

I still had a whole sour cabbage (head?).
So, for today I wanted something special and easy.
It is slightly time consuming (until you get the skill of rolling, lol).

Ok, and before that, yesterday i had a very simple meal.
I had cut the shredded, and small cabbage leaves into the thin stripes.
Wanted to add some oil (you may if you want to, it is more delicious if you do; no need for salt or vinegar - more than enough of both in the sauerkraut), but I ate it with chips.
It was delicious, (sort of)healthy and fulfilling.

Ok, and now sarma.

20 bigger leaves (the outer leaves, be careful not to tear them)
The rest of the leaves cut into thin stripes.

For filling:
250gr minced beef
250gr minced pork
1 egg
salt, pepper
1 onion, cleaned and chopped
1 spoon oil
40-70gr rice (the thing is that I have no idea how much it is - I use a little cup for Turkish coffee as a measure)
3-4l water mixed with red pepper paste

Fry the onions.
In a large(ish) bowl mix these onions, meat, egg, salt and pepper.
I usually do it with hand, as it mixes better (WASH YOUR HANDS FIRST!!!)
Take one leave, lie it on a plate, and put a biggish chunk of the filling on the leaf. Fold the leaf...

It looks like this, but without the tomato sauce
Nope, there are no pics how to make it.
Anyway, after you fold the leaf in half, roll it, and then tuck the loose part in.

Take a lager cooking pan (4-5l) and at the bottom put cut sauerkraut. That one will prevent that sarma does not burn (in case you forget to add water later on).
Lay the sarmas on the cut cabbage, add the water (stir in the red pepper paste, first), and let it cook.
Open all windows and doors, as it will stink.
But it's delicious.

I usually eat it either with bread, or with mashed potatoes.

Pasta with vegetables

1 carrot, cut in sticks
1 celery root, cut in sticks
1 small spring onion, thinly sliced
or
the green of the leek, again thinly slices
3 spoons oil
2dl tomato sauce
2dl water
salt, pepper, chilli pepper, cumin,
190gr fusilli pasta

Firstly, steam the carrot and the celery for 5 minutes.
Put the 190gr fusilli pasta in 1/2l water to cook for 7-10 minutes.
In a small frying pan add a tea spoon of cumin and fry it a bit.

Put the oil in the pan. Add celery and carrot. Fry for 5 minutes.
Add tomato sauce and stir it all together.
Then add water, salt, pepper, ground chilli pepper and cumin.
Stir and let simmer for 5-10 minutes.
When ready, add pasta, add spring onions/leek and mix it all together.
Mmm… delicious!

Pumpkin risotto

My friend's Mum, teta M., gave me the recipe for this dish.
I didn't make it completely her way (some ingredients I didn't have/don't use), and it was still perfect!
The only "bad" thing was that there was too much pumpkin in my risotto, lol.

Here it goes:
1 carrot, cleaned and sliced
1 leek (only white part,said Mum, but I put the whole small one - cut thinly)
1 onion, chopped
4-5 cloves of garlic, chopped
1 small pumpkin, cleaned and cut in cubes
50-100gr bacon, cut thinly
70gr rice
1.5cm ginger, peeled (I put the powder, as I had no fresh root)
salt, pepper, red pepper powder, parsley
3/4 - 1l water

Firstly, fry the bacon a bit (a minute), add onions, garlic and carrots, and continue stirring for another 4-5 minutes.
Then add leek and pumpkin and continue stirring for another 3-5 minutes.
Then add water, salt, pepper, red pepper powder, parsly (and a pinch of rosemary-oregano-basil mixture).
Stir. Add rice and let it cook.
The dish is ready when rice soaks in the water.

Five minutes before turning off the heat, grate the ginger and add it to the risotto.

It takes 35-45 minutes to prepare.

Btw, teta M. recommends Knorr cube (soup), if you do add the cube, add less salt!

Buckwheat with Bollogniese sauce

Since I was all in the minced beef mood, I have decided to make the pasta sauce.
But no pasta, lol.

2 onions, chopped
5 cloves of garlic
4 spoons oil
200gr minced beef
2dl water
3dl tomato sauce
salt, pepper, rosemary, oregano and other delicious mediterranean herbs

Put oil in the cooking pan, warm it up, and add onions and garlic. Let it brown while stirring.
Add meat, and fry more and stir, stir, stir.
Add salt and pepper and water and let it cook until the water has almost evaporated (I like my food well cooked, lol).
Then add tomato sauce and let it cook/simmer for another 15 minutes.
Five minutes before turning off the heat, add herbs, and stir them in the sauce.

The sauce is rather heavy, DO eat it with any kind of salad (green or cucumbers or whatever you like).

My meal was with buckwheat.
I cooked 70gr buckwheat and poured sauce over the grains.
And still enough sauce for another day.
Bon appetite!

P.S. Btw, the other day I ate the sauce with mashed sweet potatoes! And green salad (lemon juice/olive oil/salt dressing).
Peel 2 or 3 sweetpotates and steam them for 7-10 minutes. Mash without any fat/butter added. Lovely!

Beef stew

I know I am a bit peculiar. It is simply like that.
I like cooking my clear chicken soups, or if you’d prefer chicken bullions, with a piece or two of beef. Yes, I know it is supposed to be the chicken soup. It still is, but with a slight additional taste.
Well, after I finish the soup, usually, I don’t know what to do with the beef. So, what I do is put it in the freezer, for some other time, other dish.

Well, today was that kind of dish.
I took my already cooked beef and decided to make the beef stew.
As I had only an hour to prepare for work, perfect for cooking and taking shower and dressing and all kinds activities needed fro the morning grooming, lol.

Here:
1 onion, cleaned, and chopped
4 cloves garlic, cleaned and chopped
2 carrot, cleaned and cut
2 potatoes, cleaned and cut
3 spoons oil
cloves, bay leaf, pepper(whole), jeneverbessen (klenove bobe)
salt, pepper and red chilli pepper
tea spoon red pepper (paprika) powder
1 teaspoon arrow root powder
1.5l water

Put the oil in the pan, then add onion and garlic and let it fry, (stir!!!) for a while until it gets brown-ish. Then add vegetables, all herbs and spices except for red paprika powder and arrow root powder.
Fry for a while.
Add meat, and add water. Put the flame a bit higher, until it starts to cook, then half the heat and let it simmer for 20-30minutes.

Delicious with bread, or with mashed potatoes. Or you can eat it alone (as I did).

Boy, I’m SUCH a good cook!!!

Chicken stew

Just for the beginning!
I got lucky!!!naughty
Got the ticket for The Killers on Thursday in Amsterdam! Something that makes me very, very happy, as it's been sold out and I have forgotten to check the site and forgotten to check the tickets and forgotten to check the date, lol.
Ha!
Super!

And now the food.
Breakfast:
four rice cookies with banana (extra ripe, just the way I like it) and honey.
Of course it left me hungry so I added two oranges afterwards, lol.

And now the stew.
Firstly a note: add any herbs and spices you have.
I have added everything except the nay leaf and rosemary (for a change, lol)
250gr chicken, cut in piedces
1onion (smallish) chopped
4 cloves garlic, chopped
3 potatoes, peeled and cut in cubes
3 carrots, cleaned and cut in bigger cubes
1/2 cassava (the one left from the rabbit, last week) chopped and cleaned
salt, pepper, jeneverbessen (klekove bobe)
oil
1 spoon red pepper paste (or red pepper powder)
1 tea spoon arrowroot powder
3l water
celery sticks, cut in pieces

Put a bit of oil in the pan. Add onions and garlic and let it fry until it softens and gets brown.
Add meat. Let it fry for a while (I do it until it gets a bit brownish, too), then add vegetables and fry for a bit more (5 minutes).
Add water, and let it cook/simmer for 45 minutes.
Then add arrowroot powder and celery and let it cook for another 5 minutes.
Ready!

Btw, arrowroot thickens the stew a bit.

Mushroom soup

Today I had an easy breakfast and lunch.
I baked chicken yesterday and today I've eaten that.
In combination with 250gr quartered mushrooms. And 400gr mixed green salad.

How t prepare mushrooms:
Put a bit of oil, add mushrooms, some herbs (my beloved rosemary and oregano are always close, lol) and fry for 5 minutes.


As for the dinner I am making soup.

1 small onion, cleaned and finely chopped
2-3 spoons oil
150gr mushrooms, cut in stripes
1 spoon red pepper powder or red pepper paste (paprika)
1 spoon flour (I added buckwheat flour)
3/4l water (approx)

Warm up the oil. Add onions and let them fry until they get soft and brownish.
Add flour and let it fry for an another minute or two. Stir!!! You don't want it burned and black.
Add mushrooms, continue stirring for another three minutes, then add water.
Let it boil first, then lower the heat, add the pepper paste and let it simmer for another 10 minutes.

BTW, this is a simplified version of the soup my Mum cooks.
Going to eat.

Piscean Birthdays

Yesterday we Pisces (my friends/colleagues) have celebrated our birthdays.
Noooo!!! My birthday is tomorrow. :D

I made stuffed onions, and we've decided to call them Mediterranean Couscous Onions.
Here it goes:

Mediterranean Couscous Onions
(p.s. Note that all numbers are approximate. My guess. That's how I cook! Pinch of this and a pinch of that. :D)

200gr couscous
pinch parsley (dry)
powdered garlic (if too difficult, just mash two-three colves)
small pinch of crunched dry rosemary
small pinch of oregano powder
pinch of dry mint leaves
1 bullion cube (I used vegetables one, as there were vegetarians in the group)
approx 50gr capers
approx 70 gr olives filled by garlic (sliced)
100gr sheep/goat feta cheese (cut in small cubes)
300gr sun dried tomatoes in oil, if possible use ones that have herbs added in the oil(cut them in stripes or flakes, or whatever - they're quite difficult to cut)
6-8 large onions
1 whole garlic, cleaned and chopped

Preparation:
Take 1/2l water and dissolve the cube. Let it simmer for a minute, then add couscous, parsley, garlic, rosemary, mint, oregano. Mix it well all together.
Let it simmer for a minute or two, then turn off the heat, cover it and let the grains soak in the water.
Note: I made couscous a day in advance. Wise, all liquid had been soaked in.

Half the onions lengthwise (good word? so, you see the length, not the circles, ok?).
You'll have to be quite patient here, as you divide the layers. I used two or three layers "cups", depending how thick the layers were.
So, from 6 onions I made approx 20 cups.

Chop the middle part of the onion (the core parts).
In the frying pan put enough oil from the sun dried tomatoes. Put onions and garlic in and let it fry until they get nicely soft and brown. When ready, add them to couscous. Add capers, olives, feta cheese and sun dried tomatoes. Mix it all well. Add 3-4ts oil (from tomatoes) to the mixture, and mix it well.

Fill the onions with the mixture, put it in the preheated oven for 20-30 minutes, 200C.
Delicious when warm!

And then I made a cake, one that M. and myself have named Wet dream.

Wet dream
(actually, it was a flopped try to make "almost kremsnjite")

1 package Verkade Langetjes with cinnamon (dakle, to su palac siroke, i oko 10cm dugacki dvopekici, psuti secerom i cimetom u prahu; Veerkade je proizvodjac, Langetjes je ime)

65gr custard powder
65gr sugar
300ml whipped cream
one small bag vanilla sugar
100gr dark chocolate
0.5dl rum

Firstly, I made custard pudding with 0.9l milk (mix sugar and custard powder into thick paste, without clogs). I cooked it for a long time so that it gets super thick. The put to cool down.

Make the whipped cream (slag).

In the mean time take 1dl milk, add vanilla sugar and let it simmer a bit - sugar needs to dissolve. When ready, add rum.

Lay the layer of Veerkade Langetjes. Pour milk with rum over it (so that the cakes get lovely soft).

Ok, here I made mistake. As there were clogs in the pudding, I used hand mixer to mix it together with whipped cream. NO! Don't repeat my mistake.
To get rid of the clogs, firstly blend the pudding itself. And not for too long, otherwise it'll turn to liquid (and you'll get Wet Dream cake, lol).
After that, add as much whipped cream to the pudding as you like and mix it all together by hand!
No hand mixer!!!

Put in the fridge. Let it cool down.
In the end I melted chocolate, added a bit butter to it and poured over the cake.
C'est tout.

It was delicious, wasn't it? :D
