Chinese cabbage

100gr bacon, cut in small, thin stripes
1 smallish carrot, sliced
500gr Chinese cabbage, cut in thin stripes
30gr raisins
chilli pepper flakes, ground coriander
9 cherry tomatoes, halved (I had to use them)

Put the bacon on the very low heat, so that it gets seethrough.
Add carrot, and let it steam/fry for 5 minutes.
Add cabbage, raisins and spices.
Let it fry for 10-15 minutes.

Very nice with rice noodles.

Again?

After long time, here we go again.
R. asked me a few days ago if I cook and why I don't cook that often.
Also, do I eat healthy or... what am I doing anyway in that important gastronomical field.

Well, I have decided to continue.
Especially because I had a great goat stew.

350gr goat meat, cut in small cubes
2 middle sized onions, cut in rings
1 whole garlic, cleaned and cloves cut in rings, too
4 tomatoes, cut in eight
salt, pepper, jenneverbessen (3) - klenove bobe, rosemary
2 spoons of oil (I use chicken fat)
1dl water

Put oil in the pan, fry the onions for a while.
Add meat and continue frying. At one point, when the onions get a bit browner (after 15min) and you see that the meat is not red any more, add 1dl water, cover and let it cook in the steam.
After 20 minutes, open the lid and let as much water as possible evaporate.
Then add garlic, tomatoes, spices, cover again, and let it cook for another 20-30 minutes.

Goes perfectly with polenta.

Salad

For today I have decided to have green salad for lunch.
So I prepared"

0.5kg asparagus (steamed; ok, a bit less after peeling and cutting the last 2cm) and cut in 1cm long chunks
300gr green salad mix (from the shop)
7 olives (thinly cut in rings)
1 spoon cappers
4 dried tomatoes (from the pot, cut in small pieces)
2 slices fried pumpkin (pot, bought in shop)
oil

I mixed it all together.

As tonight I am going to be hungry (this won't keep me till 22h, lol), I still have chicken soup.

Pumpkin risotto

I had some already prepared pumpkin in the freezer, so I decided to make this delicious and easy risotto again.

70gr rice (I used zilverrijs, silver?), washed
100gr bacon, cut in thin stripes (btw, you can skip bacon if you want to)
1 leek, cut in rings
1 huuuge onion, cut in rings
3-4 cloves of garlic
pumpkin (as much as you want), I had approx 300gr
oil, salt, pepper, soup stock or a cube, oregano/rosemary/

Pour oil in the pan. Warm it up and add onions. Add garlic and stir.
Add bacon and stir for another 7-1 minutes, or at least until the bacon stripes become see-through/onions get brownish.

Add rice and continue stirring for another 5-7 minutes.
Add pumpkin cut in cubes and stir for another 5 minutes.
Then add water (or soup stock), a soup cube, salt, herbs, pepper and let the rice soak in the water.
That's it!
Delicious with the green salad!

Pasta with cottage cheese

And hello again!
I have stopped writing for a quite a long time.
In the mean time, I was at home (twice) and brought food from there, so actually I was mostly eating meat with salads, than actually cooking and making the real healthy food.

So, here is a my entry for today.

In the morning I had lots and lots of porridge.
Buckwheat, cooked on water, with a few raisins for sugar.
When ready, I stirred in a tea spoon of cinnamon powder, and then washed and cleaned 250gr strawberries (yes! the season has begun) and cut it into my porridge.
Btw, i really eat lots and lots of porridge. I simply adore that warm, liquid, thin-ish mass early in the morning (the description can be applied to another thing our body extracts, LOL).

Lunch:
60gr spaghetti
50gr frozen spinach
70gr fresh cottage cheese
50gr pumpkin seeds

Cook spaghetti as you like them to be.
Take the spinach and put in the pan with a small lump of ghee, low temperature. I let it stay on the cooker until all water evaporated.
Fry your pumpkin seeds until they get brownish.

Put it all together.
Delicious! Although... I had added some chilli sauce later on when having my lunch as it was a tiny bit too blend for me. :D
But filling!

And tonight going to bake bread and make chicken soup.

Long day

I was free today.
Horrible days those free days, lol.
Had a huge(ish) pot of hazelnut spread, some with bread, some without.
Really horrible.
For lunch made soup. Yes, the usual stuff, lol.

Not exactly the best day.

But the weather, hey...

Jerusalem Artichockes

Good week or maybe two ago I have bought Jerusalem Artichokes.
Actually, in Dutch they're called "aardperen". Well, I am curious. And never seen anything like that so decided to make something out of aardperen (kruske iz zemlje).
So, I searched the net in search for...

A very interesting recipe.
What I've done was used the apple vinegar instead of white vinegar (I have no white vinegar).
Really wonder how will it come.
It'll be eaten with salad.

And this morning I had PIZZA for breakfast!!!!!
YES!!!!
Yesterday evening I baked bread (corn-rye - yes, with gluten) and left a bit for my pizza.
Half pizza I made with cheese and pesto, other half was with anchovies. And lots of onions and tomato sauce and capers and olives.
Oh, I love my surprise breakfasts...

Now waiting for the JA...
Will let know.

Update
Here I am. Make sure you DO cook them for the full 25 minutes. And only THEN take of the lid and bake a bit more. I was in a hurry (hungry!!!!) so, mine were a bit too undercooked. :D

Update 2 (31.03.2009.)
Ok, if you can't digest inulin, (it's a type of carbohydrate and JA are FULL of that stuff), beware!!!

Leek stew

Easy and quick

50gr bacon (for taste) - cut in stripes
2 cloves garlic
1 carrot (cleaned and cut)
1 potato (peeled and cut)
1 leek (cut and washed)
1l water
pepper
1 spoon red pepper paste
2 spoons corn flour

Put bacon in water and let it cook for five minutes.
Then add carrot and cook for another five minutes.
Then add potato and leek, red pepper paste and pepper (freshly ground if possible) and let it simmer for another 15 minutes.
5-10 minutes before turning off the heat, add 2 spoons of corn flour (for polenta) to thicken the stew.
Eat with bread.

P.S. I added some red chilli pepper (but again too much - it was super spicy, just the way I like it, lol).

Experiment with green salad

I hate the third day.
It's always painful. And I feel swollen like a huge balloon.
And I am not in the mood to eat, and I don't eat that much. And still I feel like I have eaten a ton of food and I feel full and swollen and... bah!

So, today, after the breakfast (buckwheat porridge with two oranges and raisins, cooked on water, with some cinnamon, from yesterday :D), I ate only a few grapes.
And I feel like I've eaten a whole barrel.

Anyway, for today I wanted something simple and easy and not too difficult, and not too heavy. And it had to come with the green salad.

So, my first thought was rice with basil paste, but then...
BTW, thank goodness I have finally finished that rice. I really had no idea how to cook it. On the box it said, put the rice in the boiling water. I did it today. When I checked 20 minutes later, it was still as hard and non-swollen as before.

So, here it goes:

1 whole green salad
40gr rice
1 tin sardines in oil
3 spoons basil paste
2 spoons olive oil
3 spoons grape seed oil
1 lemon
a pinch of salt (not too much, as sardines are already salty)

Cook the rice (check how your rice needs to be cooked, to get it swollen and fluffy).
Cut the salad - I used ijsbergsla - no idea about the name in English - you do not open the leaves, you need to cut it in stripes, then wash the cut salad.
And them mix all together.
It is a bit unusual, but it is light enough and lots of fibre.

No dinner for me.
But sleep! Sleep! SLEEP!!!

P.S. Eating the salad. It is perfect! Nice combinations.

A small thing, but made my day

The times are changing.
I am changing.
Even I do complain about the younger generations being "too loose, having no sense of respect, lazy" or whatever my generation has been accused by the previous one.
I don't like generalisations, and I still do it.
And here comes the good part. Sam Barrera, you good young man.
